26 ounce veggie tray = 24 bites

Hi Chef - I'm very impressed with your CHeat Sheet! I have a few questions as I am using it for the first time. Can you define 'bites'? I have a medium appetizer party for 50 from 5 - 8 pm. Averaging 9 'bites' times 50 people times 3 hours comes up to 1,350 bites. My customer has chosen 7 appetizers as follows:
meatballs; shrimp with smokies; cobb pasta salad; cheese and pear spread with crackers; different cheese and pine nut spread with crackers, chicken fajitas, and mini roast beef sandwiches.
My question is: Would a serving of fajita be considered 1 bite, or maybe the equivalent of 2 or possibly 3? Same with the roast beef sandwich - I might be going overboard, but I'm having a hard time meeting 1350 bites.
Using my current model I would make roughly 65 servings of everything (a 30% buffer) I come up with 455 servings. Thanks for any clarification you can provide :)
